You Need :
Oats, whole : 1/2 cup
All purpose Flour : 3/4 cup
Sugar : 1/2 cup, powdered
Butter : 100 gm., room temperature
Baking Powder : 11/2 tsp.
Baking Soda : 1/2 tsp.
Salt : a pinch
Milk : 2/3 cup
Vinegar : 2 tsp.
Vanilla essence : 1 tsp.
Chocolate Chip : 1/3 cup
Slivered almonds to sprinkle
How To :
- Preheat oven in 180 C. Prepare a muffin pan by greasing a muffin pan.
- Grind the oats into flour, keep aside. Mix milk and vinegar and give it a good mix, keep aside.
- In a bowl, mix oat flour and APF, add baking powder, baking soda and salt together. Add powdered sugar in there. In the same bowl, add melted butter, Milk-vinegar mix and vanilla essence. Then with an electric beater, beat till you have a creamy batter.
- Lastly add chocolate chips in the batter. Mix.
- Drop 2 tablespoons of batter into the prepared muffin pan. Sprinkle some slivered almonds on top of each muffin. Bake in preheated oven for 35-40 minutes or a toothpick inserted in the center, comes out clean.
