A VERY MERRY CHRISTMAS TO YOU ALL!!!!
This Ginger cake or we call also call it "Ginger Bread", is another hot favorite and a classic treat during Christmas time. Its origin dates back to 992 CE. Each continents have their own version of Gingerbread. But a typical Gingerbread will contain fresh ginger/powder, ground cloves, nutmeg or cinnamon and sweetened with honey, brown sugar and molasses. Gingerbread’s deep, rich color comes from molasses. The smell of it baking in the house bring the holiday mood instantly.
Not only during holidays, you can serve this cake anytime with tea/coffee. Let's move on to the recipe now...............
You Need ::
All-purpose Flour : 1&1/4 cup
Brown Sugar : 3/4 cup, powdered
Molasses : 1/2 cup [I didn't get molasses, so used date syrup, you can also use maple syrup]
Eggs : 2
Butter, unsalted : 3/4 cup(keep in room temperature)
Baking Powder : 1 tsp.
Baking Soda : 1/4 tsp.
Fresh Ginger Juice/grated Ginger : 1 tblsp.
Salt : 1/2 tsp.
Milk, lukewarm : 1/2cup or as needed
Spice Powders :
Ground cinnamon : 1/2 tsp.
Ground cloves : 1/2 tsp.
Ground Ginger Powder : 2 tblsp.
Ground Nutmeg : 1/2 tsp.
How To ::
- Pre Heat oven to 180 degree C. Preapre your baking tray by greasing with butter and dusted with some flour. Tap and remove the excess flour from the pan. Set aside.
- In a bowl, sift together flour, baking powder, baking soda, salt, all the spice powders including ginger powder. Sift and set aside. Mix everything very well.
- In another big bowl, cream butter and brown sugar. Then add eggs one at a time. Add molasses in the batter. Now slowly add sifted flour mixture little at a time into the creamy batter. Add milk in between if needed.
- When all the flour mixture are added and you have a creamy batter, you are done. lastly add freshly grated ginger or ginger juice in the batter, mix a little.
- Carefully pour the batter into the prepared baking tray and bake in middle rack in 180 degreeC for about 40-45 minutes or a wooden toothpick inserted in the center of the cake, comes out clean.
- Let it cool in the pan for sometime and then remove from pan and let it cool completely before you cut.
