This week I made this creamy parmesan chicken for a weekend treat. Doesn't it look sinfully delicious? This is also very flavourful as parmesan, garlic, tomatoes, chicken and heavy cream are match made in heaven. The creamy garlic flavoured parmesan sauce is to die for. It may sound quite heavy in calories but we can devour some gourmet meal once in a while, right? The sauce doesn't have to be loaded with loads of parmesan and heavy cream, some moderate amount is enough to give this dish an exotic touch and taste. It's very easy to make and takes less than 45 minutes to prepare. So, what other reasons you need to try this dish?
You need boneless chicken breast for this recipe and everything else you will have in your pantry if you are an Italian food lover like me. If not, you will find all these ingredients in any grocery store near you. Let's move on to the recipe now....
You Need :
Boneless Chicken breasts : 2-3
Salt and black pepper to taste
Garlic, minced : 2-3 big cloves
Crushed red pepper flakes : 1/4 tsp.
Chicken or vegetable broth : 3/4 cup
Extra-virgin olive oil : 11/2 tbsp.
Fresh/dried rosemary/thyme : 1 tblsp.
Heavy cream : 1/4 cup
Thick Tomato Paste/puree : 1/2 cup
Grated Parmesan : 1/4 cup
Fresh/dried parsley, for garnishing

Serving Suggestions ::
This dish can be a whole meal itself, if you are on a carb-free diet. If not, try this with plain/herb rice, couscous or even with pasta. I served mine with some garlic flavoured Spaghetti. The spaghetti I served it, is just tossed in 1 tblsp. EVOO and crushed garlic.

You Need :

How To :
- Clean and pat dry the chicken breast pieces. Sprinkle some salt and black pepper on them and set aside for 15-20 minutes.
- Heat 1 tblsp. Olive oil on a saute/frying pan, add chicken and in medium-high heat sear until golden for about 3 minutes in each side. Remove from pan and keep aside.
- Heat 1/2 tblsp. olive oil in the same pan, add minced garlic, saute for a minute, then add thick tomato paste. Add fresh or dried Rosemary or Thyme in there, aloo aadd red pepper flakes and saute everything well for couple of minute.
- Then add chicken or vegetable broth in the pan. Mix with the sauce. Add heavy cream and grated parmesan. Mix everything well, season with salt and black pepper as per your taste, but be careful with the salt as parmesan is already salty. In low flame, let the sauce cook till parmesan mixes well.
- Add sauted chicken pieces back in the pan and let it cook with sauce for 3-4 minutes.
- Meantime, pre-heat your oven at 160 degree C. Transfer the chicken with parmesan sauce over them into a oven proof dish and put it into the oven. Bake for 15 minutes or until chicken pieces are fully cooked through.
- Serve immediately.
