Whole Wheat Ajwain/Jeera Cookies

   My readers and blog followers, you all know how much I love baking. I don't leave any opportunity to bake and one such opportunity came to me when my blogger buddy Moumita (Peek N Cook) asked me to bake some cookies for his toddler. Moumita was visiting my city which is happened to be her birth city too but she is living in different city now. She doesn't love to give her toddler any outside food, even not cookies. She makes every food he eats at home. Hats off dear Moumita. I took the opportunity to bake some whole wheat ajwain cookies for her boy who is a big foodie already.

    I could not dared to alter his already settled taste for cookies as kids do not love to change their taste bud so often, my experience tells me that. So, I followed her recipe to the T and baked 2 dozen cookies for the lovely boy. I was overjoyed hearing that he loved every bite of it, as he already knows the taste.
This is absolutely great for kids as well as adult, too. No maida/refined flour, it has the goodness of whole wheat in its every bite. Kids can enjoy this wholesome cookie with milk and adults with tea/coffee.

Let's move on to the recipe now, I am giving you the recipe as I clicked the step-by-step process to bake this cookie or any type of cookie.
You Need :
Whole wheat flour(atta) : 1 cup(coffee mug size)
Sugar/brown sugar : 1/2 cup(same cup measured)
Baking Powder : 1/2 tsp.
Baking Soda : 1/4 tsp.
A pinch of salt
Unsalted butter : 1/2 cup(at room temperature)
Milk : as required to bind the dough
Ajwain/caroom seeds : 1 tsp.( can use cumin seeds/jeera for flavour)
Vanilla extract : 1/2 tsp.
Cookie cutter : any shape

How to :
  • In a bowl, take atta/whole wheat flour, baking soda, baking powder and salt. Mix and then sieve the mixture and keep aside.
  • In a mixing bowl, beat butter and sugar with a hand mixer and beat until creamy. Now add the sieved flour mixture into the mixing bowl and using hand, mix the dough till you get a crumbly firm dough. Add enough milk to combine them altogether and you get a soft pilable dough.   • Now cover the dough with a plastic wrap and keep aside for 1 hour or can refrigerate for 1/2 an hour. 
  • Take out, dough will tighten a bit, knead the dough for couple of minutes and it will start to loosen up. Divide the dough in half. Now dust you kitchen counter with some flour and roll out one dough into 1/2 inch thickness using a rolling pin. Cut into desired shape by using any cookie cutter. I have used my star shape cookie cutter for the boy. 
 
  • Place the cookies on a greased and floured baking tray keeping an 1/2-1 inch space between two  cookies.
 
  • Pre-heat your oven to 170 degree C and bake for 20-25 minutes or cookies turn golden brown in color. Remove from tray and place on a wire rack to cool. After baking cookies may not look crispy, when they cool completely then the cookies will turn crispy. So, let them cool overnight or at least 6 hours to cool completely. 
  • Then enjoy with milk/tea/coffee.
