Today I'm posting a very easy appetizer or a light snack which goes very well with your evening tea or coffee. I found this recipe in Vah Reh Vah Chef's page and tried immediately. Cubed paneer pieces are dunked in a batter, then shallow fried in oil and then coasted with some spices, herbs and lemon. Just mouth watering, definitely give it a try................
You Need :
Panner(Indian Cottage Cheese) : 250 gm. [cut into big/medium cubes]
For the batter ::
All purpose flour : 1 tblsp.
Corn starch/cornflour : 1 tsp.
Rice flour : 1 tsp.
Ginger-garlic paste : 1 tsp.
Salt to taste
Red chilli powder : 1 tsp. or as needed
Garam masala Powder : 1-2 tsp.
Amchur/dry mango powder : 1 tsp.
Turmeric : 1/2 tsp.
Curry leaves : 7-8 nos.
Green chillies : 2-3, slitted from middle
Coriander powder : 1/2 tsp.
Black Pepper powder : 1 tblsp.
Red chilli powder : 1/2 tsp.
Salt to taste
Butter : 1 tblsp.
Oil : 2 tblsp.
Lime juice : 1 tsp.
Fresh coriander leaves : a handful

How To :
- In a bowl, take cornflour, rice flour, all purpose flour, turmeric, garam masala powder, amchur/dry mango powder, salt and ginger garlic paste. Mix everything well, then add enough water to make a thick paste, so that the batter can coat the paneer pieces well.
- Heat 2 tblsp. oil in a frying pan, coat the paneer pieces in the prepared batter and fry them from both sides till golden brown, remove and keep aside.
- Heat 1 tblsp. butter in the same or some other pan, add curry leaves, slitted green chillies, saute them for a minute, then add coriander powder, chilli powder, black pepper powder, salt and add fried paneer pieces, toss them well.
- Lastly, sprinkle lime juice, coriander chopped and toss them again. Remove and serve immediately.
- Enjoy spicy and flavourful fried paneer pieces with your evening cuppa or as a side dish.
