A paratha is an Indian flatbread, usually fried with a little oil or Ghee(clarified butter). There are many many varieties of Paratha available in Indian cuisine, like layered paratha, stuffed paratha or plain paratha. The stuffed parathas are very heavy and it's an enough meal for itself. The name of the stuffed paratha comes from the stuffing it has, like Aloo Paratha is stuffed with spiced and mashed potato, Gobi paratha is stuffed with spiced and mashed cauliflower/gobi like this. Parathas can be stuffed with anything you can think of. I tried these unusual types so far rather than regular aloo or gobi or muli(radish)paratha - Paneer paratha, Methi onion garlic paratha or Atta, oats and Spring Onion paratha.
Sometimes I also prepare parathas stuffed with mashed and spiced Sweet Potato instead of regular potato, just because of the huge health benefits a sweet potato has. Do know know how sweet potato can help keeping you healthy?

To make Sweet Potato Paratha
You Need :
Wheat Flour : 2 cups
Oil : 1 tblsp.
Salt : 1 tsp.
Ajwain/Wild celery seeds : 1 tsp.
Oil for shallow fry the parathas
For stuffing :
Sweet Potato : 2(medium)
Ginger : 1/2", finely chopped
Green Chilli : 2, finely chopped
Tomatoes : 1, small, chopped
Oil : 1 tblsp.
Salt to taste
Red chilli powder : up to taste
Turmeric powder : a pinch
Dry mango powder/chat masala : 1 tsp.
Fresh coriander leaves, finely chopped

To make Sweet Potato Paratha
You Need :

Tomatoes : 1, small, chopped

Dry mango powder/chat masala : 1 tsp.
Fresh coriander leaves, finely chopped
How To:
- Boil sweet potatoes till done, cool and mash completely avoiding not to make any lumps. Keep aside.
- Let's make the stuffing first : heat oil in a pan, add chopped ginger, green chillies and tomatoes, stir till tomatoes are soft, then add mashed sweet potato. Stir and mix well. Add turmeric, red chilli powder, chaat masala/dry mango powder and salt and mix everything well. Add fresh coriander leaves and stir until there is no moisture left. Keep aside and cool.
- For the dough : Take flour in a bowl, add oil, salt and ajwain seed. Mix together well. Then add enough water to make a soft, pilable dough. Make balls from the dough.
- Roll out the parathas : take each ball, flatten just a bit with rolling pin, place 1 big tablespoon full of sweet potato/potato mix. Gather all ends and cover the stuffing and roll again into a ball. Then roll with a rolling pan without pressing too hard (then it'll break and stuffing will come out) into a 3-4" round disc. Similarly stuff other flour balls and flatten them.
- Now heat a tawa or flat frying pan, add little oil at a time, place one round disc and fry in medium flame till golden brown on one side, then flip to the other side, add 1 tsp. oil and fry that side till golden brown.
- Similarly, fry other parathas and serve with any kind of curries or just with tomato ketchup, tastes awesome.
