Microwave Mango Halwa~Also a Yummy Bread Spread And an announcement

The season of mangoes are almost over, but last few months my kitchen was flooding with mangoes. Bengalees often bring mangoes with them when visiting friends or relatives during mango/summer season. That way, last few months one of my fridge drawers was full of mangoes and I couldn't finish them after making lassis, eating raw. So one day, I decided to make Mango Halwa using all these mangoes. I thought to prepare it in Microwave instead of Stove-top, so I can avoid stirring it all the time and make it mess-free.



Ingredients :
Mango pulp : 3 cups( I used 7 fresh mangoes)
Sugar : 4 tblsp.
Ghee(clarified butter) : 2 tblsp.
Grounded Cardamom Powder : 1 tblsp.

Method :
  • Take out all the pulps from mangoes. In a blender, blend it to smooth creamy pulp.
  • Now take a microwave safe bowl, pour the pulp in it. Add 3-4 tblsp. sugar and stir well. 
  • Microwave on high for 8 to 10 minutes and do not forget to stir once in between.
  • Take out the bowl, add ghee and stir to mix well. Check if the sweetness if OK for you. If not add little more. Again microwave on high for 15-20 minutes and do not forget to stir every 5 minutes in between.
  • Take out the bowl and check out the consistency, if you think the halwa consistency is not reached, microwave again for 4 to 5 minutes.
  • When you are satisfied, take out the bowl, add grounded cardamom powder. Stir and set aside to cool down a bit before tasting the halwa. 
  • Serve chilled or in room temperature. You can garnish with finely chopped pistachios or mixed nuts. I love it without them. 
   After preparing it, I realized we can use this Mango Halwa as a spread on bread. It tasted so yummy. My kids are going crazy over it, only want this spread with bread. Even me liked it so much. Try it friends for your kids, I am sure they will love this.......................
