Thandai is a very popular drink of Rajasthan and Northern India, which is served cold. It is sweet to taste saffron and rose flavored milk based drink with a mixture of exotic dry fruits like almonds, cashews, Pistachios. This is very healthy drink and cools your body in scorching summer heat.

1 tbsp poppy seeds (khus-khus)

Ingredients :
1/2 ltr full fat milk2 tblsp. sweetened condensed milk
1/3 cup powdered sugar or as per your taste
a few saffron (kesar) strands
To be ground into a fine powder
1/2cup almonds (badam)
1/4 cup cashewnuts
10-12 pistachios
1 tbsp poppy seeds (khus-khus)
1 tbsp fennel seeds (saunf)
1/2 tsp cardamom (elaichi) powder
7-8 black peppercorns (kalimirch)
2 tsp. Rose water or rose essence
Method :
- Boil the milk and allow it to cool completely. Keep aside.
- In a mixer, take all the ingredients to be ground section, and make a very fine paste. Refrigerate the paste for 2-3 hours.
- Before serving, add condensed milk and the fine grounded paste into the milk.
- Serving : In a serving glass, strain the milk mixture through a fine sieve. Add sugar to taste. Sprinkle some chopped pistachios and few saffron strands. Serve immediately or chilled.
