This mushroom soup can be whipped up in a jiffy using the microwave oven without much hassle. It can be the perfect choice to cook up on a day when you return home from office famished & tired or on a rainy day to warm up. This can be a healthy after-school treat for kids. I often make this for my daughter when she comes home from school.
Onion : 1(chopped)
Water : 4 cups
Garlic : 1 tblsp.(chopped)
Mix-vegetables(carrot, broccoli, corn) : 1/2 cup(finely chopped)
Thin noodles
Cornflour : 2 tblsp.
Milk : 1 cup/cream : 1/2 cup
Butter : 1 tblsp.
Red chilli flakes : 1 tblsp.(optional)
Salt to taste
Black Pepper powder to taste
Ingredients :
Mushroom : 5-6(finely chopped0Onion : 1(chopped)
Water : 4 cups

Milk : 1 cup/cream : 1/2 cup

Red chilli flakes : 1 tblsp.(optional)

Black Pepper powder to taste
Method :
- Place butter in a microwave safe bowl and microwave for 30 secs. on high or until completely melted.
- Add chopped onion & garlic and chopped mushroom, microwave for 3 mins. on high. Stir in between once. Then add water, salt and black pepper. Microwave for 10 mins. on high, stirring once in between.
- Blend the soup in a mixer to a smooth puree. Then pour the puree in a microwave safe bowl, add chopped vegetables and broken thin noodles. Now add milk and cornflour, dissolve in 3 tblsp. water. Add red chilli flakes. Season with salt and black pepper if needed. Mix everything well.
- Add 1 tsp. butter now and microwave on high for another 5 mins, stirring once or twice in between.
- When veggies and noodles are cooked, remove and serve piping hot.
